Quick Veggie and Pasta Salad (hot or cold)


Tomato & Veggie Pasta

For the sauce:
1/2 cup diced tomatoes
2 Tb white wine vinegar
1/2 tsp basil
1/2 tsp onion powder
1/2 tsp granulated garlic

Blend in the blender or with a mixer stick. 

For the Veg:
I bought a "California-Style Mix" frozen bag of vegetables. I weighed each of the vegetables individually. These are the frozen weights of the vegetables, I don't know how much it will vary when they are thawed. Use lower phe vegetables or omit them if the recipe is too high.

45g cauliflower
15g carrot
25g broccoli

For Pasta:
I won't add the phe for the pasta, so you can use your choice. My daughter likes the Maifun rice sticks.

Directions:
1. Make sauce and set aside.
2. Boil water for pasta and cook to package directions.
3. Just before pasta is finished, add frozen vegetables.
4. Drain and add sauce.
5. Stir and serve.


Phe per recipe (without pasta) =  90.5mg*

Welcome!

My little girl, age 6

My family and I just returned from PKU Camp in Arizona. I am feeling inspired and energetic about things and decided to create a blog the low phe diet. I use mostly store bought items to make meals, but sometimes use items available only from online retailers.

I will also be adding some reviews of food products here and there. I hope you enjoy the recipes and menu ideas. Let me know if you have any comments or questions.

*The values of the food items will all be gleaned from the pages of the Low Protein Food Guide by Virginia Schuett. Please consult your own guide if you have a question about the values. I'm not perfect and may make a mistake or two.
